As part of my weekly meal-prep, I would always make these easy oatmeal protein bites that we can throw in our lunches. Each week I try to change them up with different ingredients. I’ll share below our basic recipe and some of the different spins we’ve put on these delicious little snacks!
Basic Easy Oatmeal Protein Bite Recipe
- 1 cup of quick oats
- 1 cup of old fashioned oats
- 1/4-1/2 cup of peanut or almond butter
- 1/4 cup of honey
- 1 tsp of vanilla extract
- sprinkle of cinnamon
- sprinkle of nutmeg
That’s it! Mix together that basic recipe and add in whatever else you want. Here are the ingredients we typically mix in:
- Chocolate chips
- Dried berries
- M and M’s
- Peanuts
- Coconut flakes
- Raisins
Once you have your ingredients all mixed together, put in the refrigerator for 20-30 minutes. Remove and roll into balls! I typically store them in an airtight container in our refrigerator, especially because we use them for lunches. They seem to hold up better that way.
