What’s On The Menu: Week of August 26

Welcome to our new weekly blog series, “What’s On The Menu.” I have always done some basic menu planning, but now that I also have to make a school lunch everyday, I am going to get a lot more serious about planning meals ahead of time. We try to make dinner at home Sunday through Thursday, then play the weekends a bit more by ear.

This blog series will highlight our dinners for the week and what I plan to pack in my daughter’s lunch each day. I’ll post each Friday so you can plan your own meals for the week and get your grocery shopping done in preparation for the week ahead!

Here’s “What’s On The Menu” for the week of August 26!

 

School Lunches/Snacks

Monday: 

  • Apple
  • Homemade trail mix
  • Salami sandwich
  • Cheese squares
  • Carrots

Tuesday:

Wednesday:

  • Apple
  • Hard-boiled egg
  • Jelly and cream cheese sandwich
  • Carrots
  • Pretzels

Thursday:

  • Popcorn
  • Trail mix
  • Salami sandwich
  • Carrots
  • Pretzels

Friday:

  • Apple
  • Hard-boiled egg
  • Jelly and cream cheese sandwich
  • Cheese squares
  • Pretzels and Nutella dip

Dinners

Sunday:  Smoked Baby Back Ribs with Corn on the Cob

I bought my husband this smoker for Christmas two years ago and whenever we cook on it, the meat comes out AMAZING.  We typically just throw a dry rub on the ribs. The rub we use is nothing special. We typically just combine cumin, cayenne pepper, chili powder, salt, pepper, minced garlic, minced onion  and garlic, and a little bit of paprika and voila!

Monday: BALTs

What’s a BALT you ask? It’s our take on the BLTs!  Turkey Bacon, Avoacdo, Arugula lettuce and some juicy tomatoes. YUM!

Tuesday: Chicken Tikka Masala with Cilantro Lime Rice (Recipe by Two Peas and Their Pod)

Whenever we do our Costco runs, we always have Sukhi’s Chicken Tikka Masala on our list, because it’s super easy to throw together during the week.  Combine with the Cilantro Lime Rice from Two Peas and THeir Pod and it’s one of our favorite go-to weeknight meals!

Wednesday: Leftovers

We are bound to have leftovers from either our Sunday or Tuesday nite meals, and Wednesday’s are our Soccer nite. So we always try to do something super easy on Wednesday’s as we don’t have much time to cook.

Thursday: Burrito Bowls (Cilantro Lime Rice, Chicken, and whatever other left overs vegetables I have for the week!)

Friday: Homemade Pizza’s

We typically buy pizza crust from Aldi and then let each of the kids make their own pizzas on Friday nite to enjoy along with a movie .
